What is Baking Powder?

Baking powder is a chemical leavening agent that helps baked goods rise. It contains three main components:

  1. Baking soda (sodium bicarbonate) — the base
  2. An acid (like cream of tartar or sodium aluminum phosphate)
  3. A filler (usually cornstarch) to keep everything dry

When liquid is added, the base and acid react to produce carbon dioxide gas, which creates bubbles that make dough rise.

What Does “Double-Acting” Mean?

Single-acting baking powder reacts all at once when it gets wet. That means you have to get your batter straight into the oven immediately — if it sits around, all the gas escapes and your product falls flat.

Double-acting baking powder releases gas in two stages:

  1. First stage: when mixed with liquid at room temperature, it produces some gas
  2. Second stage: when heated in the oven, it produces most of the gas

This two-stage process gives bakers a much longer window to mix, portion, and proof their products before baking. It’s far more forgiving for commercial production.

How to Use It

Typical usage is 1-2 teaspoons per cup of flour, depending on the recipe. Too much and your product will rise too fast then collapse; too little and it will be dense. Because it’s double-acting, you don’t need to bake immediately after mixing — but for best results, bake within 30 minutes of mixing.

  • Keep in a cool, dry place
  • Seal tightly after opening
  • It loses potency over time — replace opened containers every 6-12 months
